In lots of families, picky eaters and or different diet restrictions within the household can make meal planning and eating together very difficult. In my house, we have 2 gluten-free eaters, one vegan by choice with a dairy allergy, and one who will eat just about anything. We all love lots of flavors and three of us are supertasters. So, yeah, I know it can be hard.
My favorite workaround for this issue is to build your own meals- you know, items cooked separately and combined at serving time so people can omit their issues and load up on favorites.
A few ideas for this:
1- Tacos- everyone builds to taste
2- Buddha bowl- with layers of veggies, meat, and a sauce
3- Bibimbap- it's a Korean dish- a layer of rice, then sections of various cooked veggies on top, a protein, and a little sauce
4- Vietnamese spring rolls- at our house, that's ground pork cooked in spices, match sticks of cucumber and carrots, avocado, and a little sauce made of coconut aminos or GF soy sauce, lime juice, a pinch of sugar, and lots of smashed garlic.
5- A pan of roasted veggies, or a grill full in summer, and a side of protein of choice, be it chicken, bison burger or chana masala.
6- Salad! Can top it with garbanzo or other beans, salad dressing by individual choice, etc.
Just set up the assembly station in the kitchen and meet at the table, everyone with their own individual version of the meal. All happy and well-fed. And yes, mom, you can make rules about a minimum of one from each category- protein, veggies, whole grains.
Notice what they share? Lots of veggies, a healthy protein, and lots of flavors.
